As a mother of three I think that I’ve sacrificed a lot…
My whole heart to my family…
And this is as it should be.
After three somewhat difficult pregnancies which thankfully blessed me with three healthy kids, my stretched out skin and saggy parts somewhat memorialize my arduous journey through motherhood.
Despite the lack of sleep, toddlersome taunts , and my brain generally feeling like mush by the end of the day, I still think that I’ve actually acquired a vast amount of knowledge over the last seven years.
Through it all, the ups and downs, the joys and sorrows, motherhood has given me more than I could have ever expected, and it makes all the sacrifices, big and small, totally worth it.
But you know what?
Sometimes Mama just wants cake.
My own cake.
Yeah, I said it.
I want cake and I’m not interested in sharing it with anyone else.
While I wouldn’t call myself a baker, I’ve been in search of delicious carbs made without wheat since converting to a gluten free diet thanks to Celiac’s- and in particular, I miss pound cake.
My Babcia, aka my grandmother, made the best pound cake ever. Up until last year I cooked it for friends and neighbors despite not being able to enjoy it myself simply because preparing her recipe, with the sweet smells filling my kitchen, took me back to a time when she was here…and I was eating real cake.
So, I’ve been experimenting with different flours trying to find the right tastes and textures for my Babcia’s real pound cake.
This Christmas I found it.
And guess what happened? I ate two pieces before the other four members of my house went to town and left me with a couple of crumb-filled plates.
I learned my lesson and quickly hid a newly baked pound cake in the freezer, behind some other items, when much to my dismay one night I heard, “Hey! Mom has cake in the freezer! Yeah! Let’s all eat cake!”
I took my plight to Facebook and one of my
diabolical fabulous followers said to hide it in an empty bag used for frozen vegetables.
So in an effort for more deserving Mamas to have their cake and eat it too, I’ve come up with a six step simple process for having, hiding, and eating your cake -ALONE!
So there you have it! Having your cake and eating it too! And you know what?
You deserve it!
